Weighing Melt-to-Make™ Gelatin Gummy Base
Weighing our Gelatin Gummy Base is a breeze! Each Gelatin Puck weighs approximately 100 g, making it easy to estimate your target weight by simply counting the pucks needed for your batch. For larger batches, keep in mind that each case of Gelatin Gummy Base contains 10,000 g of Gelatin Pucks, conveniently divided into two 5,000 g bags. This makes scaling up simple and efficient without the need to count individual pucks. Once you’re close to your target weight, just cut the final puck into smaller pieces to precisely match your formula’s requirements.
Helpful Tip: We suggest using a pair of sharp, clean scissors to cut the last puck into smaller pieces to achieve your final desired weight.
Weighing Melt-to-Make™ Pectin Gummy Base
Our Classic Pectin Gummy Bases and Sugar-Free Pectin Gummy Bases come in a two-part format: Part A (the pectin slurry) and Part B (a 50% citric acid solution). Part A is packaged in a bucket, while Part B is in a separate container. Now, let’s walk through the two easiest ways to weigh out Part A of our Pectin Gummy Base.
Direct Weigh Method
The direct weigh method is perfect for manufacturing smaller batches. For this method, you’ll need a scale that can handle both your cooking vessel and the amount of Part A pectin slurry required for your formula. We recommend using a heavy-bottomed, stainless steel pot for best results. Simply place the pot on the scale, tare the pot’s weight, and start pouring the Part A Pectin slurry into the pot. Since the Pectin Gummy Base is a thick gel, using a rubber spatula will help direct the flow and scrape the material into the pot.
As you approach your target weight, stop pouring and switch to the spatula to scoop smaller amounts into the pot. This reduces the risk of over pouring and needing to scoop out excess base.
Reverse Weigh Method
The reverse weigh method is ideal if your scale can’t support the combined weight of the cooking vessel and base, or if you’re weighing directly into a large cooking vessel like a kettle. Start by removing the lid from the Part A Pectin bucket and placing it on the scale. Tare the weight of the bucket, then begin adding the base to your kettle. Your goal is to add enough base so that the scale reads negative numbers, reaching your target weight.
To check your progress, periodically place the bucket back on the scale and compare the weight to your formula’s required amount. As you near the target weight, use the spatula to add smaller amounts until you’ve reached your desired weight.
Weighing the Provided 50% Citric Acid Solution
To weigh the Part B 50% Citric Acid Solution, use a small beaker or another suitable container. First, tare the container or beaker on your scale, and pour the citric acid solution into it until you reach the desired weight. Once measured, set the mixture aside, as it will be added at the very end of the cooking process.
Preparing and Weighing Distillate
When adding small amounts of distillate, we've found that using a syringe works best. Begin by filling your syringe with heated distillate. You can either fill the syringe ahead of time and reheat it using a hot water bath, or fill it directly with hot distillate during production. If reheating, be sure to wipe the syringe clean of any water before removing the cap. Tare the syringe and then start adding distillate, continuing until you reach your target weight in negative numbers.
For larger amounts of distillate, we recommend the following methods to ensure accuracy and minimize waste:
Pre-weigh and Freeze Method
If you know the amount of distillate needed, pre-weigh it into a smooth-sided silicone muffin cup and freeze it. Once the distillate puck is fully frozen, simply pop it out of the mold and add it to your gummy base. Stir the puck into the base until it dissolves completely, usually in about 5 minutes, depending on its size. This method eliminates waste, as all the distillate will come out in one piece. If you need more than what a muffin cup holds, feel free to use any food-grade silicone container.Jar and Syringe Method
Another option is to heat both a jar of distillate and a syringe. Remove the caps, tare both the jar and syringe together, and start adding distillate from the jar. Once you’re close to your target weight, switch to using the syringe to reach your desired weight in negative numbers.
Weighing Powder Additives
When weighing powders, we recommend pre-coating a beaker or similar smooth-sided container with your powdered additive before taring it on the scale. This technique ensures that once you’ve weighed out the powdered ingredients, you can easily reset the scale to zero. This helps confirm that you’ve added the exact amount of powder needed for your product.
