Gummy Drying Instructions PDFTHE DRYING STEP
Drying your gummies properly is a critical step in the gummy production process. It is of great importance to dry your finished gummies to the target moisture level to ensure their optimal texture and stability. A temperature humidity gauge is required to monitor your drying condition. We highly recommend using a dehumidifier to achieve controlled relative humidity of your drying room, with temperature not exceeding 80ºF. A water activity meter is ideal but optional, if one wishes to precisely control the final water activity of the finished product.
Before you Begin
Drying your gummies properly is a critical step in the gummy production process. It is of great importance to dry your finished gummies to the target water activity level to ensure their optimal texture and stability.
A temperature/humidity gauge is required to monitor your drying conditions. We highly recommend using a dehumidifier to achieve controlled relative humidity of your drying room, with a temperature that does not exceed 80°F.Please note that a water activity meter is ideal but optional if one wishes to precisely control the final water activity of the finished product.
Drying Gelatin Gummies
We suggest drying your gummies in a single layer on a sheet pan. Please note that drying times will vary depending on the size of your gummies, as well as the drying environment.
Gummy Size: Less than 3 grams
Estimated drying time: 3-5 hours in a drying room with a relative humidity of 35%.Final water activity range should be between: 0.65-0.67
Gummy Size: 3-5 grams
Estimated drying time: 5-7 hours in a drying room with a relative humidity of 35%.Final water activity range should be between: 0.65-0.67
Gummy Size: 5-7 grams
Estimated drying time: 7-9 hours in a drying room with a relative humidity of 35%.Final water activity range should be between: 0.65-0.67
*Continue drying past 48 hours until the desired consistency and water activity level is reached.
* Please note that waxed gummies tend to take an extra day to dry.Drying Pectin Gummies
